Pumpkin Chocolate Chip pancake board!

This recipe is the recipe to truly make your whole house smell like fall. If you aren't at the "I'm ready for Fall!" stage yet, save this recipe for when you are because it is just so good. It is a thicker based batter, so honestly I feel like it could be made into muffins, or a pumpkin bread as well.

I set it up as a waffle board with fruit, syrup, homemade pumpkin whipped cream ( coming soon!), or whatever you may want for pancakes. I used mini dash waffle makers, and I will link those as well at the end. It would be a fun welcome to fall board, or a fun halloween board.

Pumpkin Chocolate Chip Pancakes

Ingredients:

DRY:

2 cups flour

1 TBSP baking powder

1 TSP baking soda

1 TSP cinnamon

1/2 TSP ground ginger

1/4 TSP nutmeg

( You could also replace the top 3 ingredients with a TBSP of my homemade pumpkin spice)

1/2 TSP salt

WET:

1 1/2 cups Buttermilk

1/2 cup pureed pumpkin, not pumpkin pie filling

2 eggs

4 TBSP melted butter

1 TBSP maple syrup

2 TSP vanilla

1 cup chocolate chips- added at the end

 

Instructions:

Mix dry ingredients in a large bowl.

Mix wet ingredients in a separate small bowl.

Add the wet ingredients to the dry ingredients.

Add chocolate chips.

Now cook how you desire! We did ours as waffles. It made about 14 small waffles for us! I saved mine in the freezer for the week for my boys to have as an option.
