Pumpkin Chili

So, so yummy! Even if you aren’t a pumpkin fan, you don’t taste it. The pumpkin is really just a thickening agent! And I mean the thought of pumpkin in fall is the best.

This recipe makes a lot! Cut in half if just for a small amount of people. I made this and saved about half of it from a family of 5

Pumpkin Chili 

What you need:

1.5 lbs Ground beef

1 lb ground sausage

1 white onion, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

4 celery stalks, chopped

1 TBSP minced garlic

1-2 TBSP chili powder

1/2 tsp onion powder

1 tsp oregano

1/2 tsp cumin

1 15 oz can puréed pumpkin

1 28oz can diced tomatoes

1-2 cups beef broth, depending how thick you want it

1 small can tomato sauce

Salt, pepper

 
What to do:

-Brown the meat until cooked.

-Add seasonings, garlic

-Place everything in a crockpot on high for 4 hours.

 

Toppings I love:

•Sour cream

•Sliced jalapeños

•Shredded cheddar cheese

•Chopped cilantro

•Chopped red onion

•Sliced avocado
