Homemade Salsa Verde!

I seriously wish I knew how easy it was to make homemade salsa verde a long time ago! It is so dang good, I don't think I can return to the jars from the store. We use salsa verde maybe every other week for this easy salsa verde crockpot, and now it has become a staple to have in the morning to put on the top of my eggs! Try it out, you won't go back.

SALSA VERDE

Ingredients:

1/2 white onion, chop in big chunks

8-10 tomatillos 

3 jalapeños, cut in half, remove stem- if want more spice, add more

1/2 cup fresh cilantro

fresh course salt

1 Tablespoon minced garlic

juice of one lime

water to boi

Instructions:

On the stove, add white onion, tomatillos, and jalapeños to a pan. Add water just to cover it all. Bring to boil, and let boil about 10 minutes. Add to a blender, after straining water, and add cilantro, garlic, lime juice, and salt. Blend to a salsa consistency. I store it in a mason jar in the fridge. Store for about a week.

 

SALSA VERDE SHREDDED CHICKEN

Ingredients: 

Large pack of chicken thighs, or however much your family needs

1 pack of cream cheese

1/2 jar of salsa verde of choice

salt, pepper

1/2 tsp cumin

1 TBSP mince garlic

1/4 cup chicken broth

 

Instructions:

Add all to a crockpot on low for about 4-6 hours. Shred the chicken. Enjoy as just a bowl, in quesadillas, in a burrito, on a salad, and so many other ways!
